I have found the perfect summer salad. Here, I'll share:
1 bag baby spring mix
1 cup quartered cucumber slices
1/4 cup sliced almonds*
1/4 cup dried cranberries*
2 tablespoons goat cheese
*sub in chopped pecans and diced green apples for variety
It is perfection, which carries a lot of weight coming from a non-salad gal like myself.
