Windsor Kale Salad

Last Thursday, I met up with some friends at a local restaurant in downtown Phoenix called Windsor. My friend lives near this restaurant, and it's been one of his faves for awhile, so I could myself lucky that he decided to share this gem with me.

We met up there after work to grab some dinner and drinks before a concert at Crescent Ballroom, another downtown treasure. I had decided beforehand that my time at Windsor would be spent more over drinks than dinner, so I just ordered a side of mac 'n' cheese and a side of their kale salad.

The mac 'n' cheese was really tasty (duh), but the salad was something special. After wolfing down the portion I was served, I eschewed my drink and all the cheesy carb options on the menu for another serving of this kale salad. Truth.

Last night at Trader Joe's, I bought all of the ingredients to make my own version of this deliciousness.

Here's Windsor's recipe:

KALE SALAD

Tuscan Kale (Julienned) 1 1/2 c
Dried Cranberries 1 Tbl
Corn 1 Tbl
Shredded Carrots 1 Tbl
Snap Peas 1 Tbl
Lemon Wedges 1/3 of a lemon wedge
Extra Virgin Olive Oil 1 Tbl
Salt & Pepper To Taste
Parmesan Cheese (grated)
Sliced Almonds (toasted)

- Toss kale, craberries, corn, carrots peas together
- Squeeze the lemon over the greens, drizzle on the olive oil and season with salt and pepper
- Toss until evenly dressed
- Garnish with parmesan and almonds

I'm having it today for lunch, and I don't think I've ever been so excited to get in my seven daily servings of veggies.

Real Simple put out a few tasty kale recipes a few months ago that I'm dying to try, too.

Surely all of this kale must cancel out the endless conga line of cinnamon rolls, macadamia clusters, and scalloped potatoes that have been finding their way into my stomach lately?

  1. i LOVE kale!!! i'm trying to get my dad on the healthy salad once a day band wagon. this is the perfect recipe to begin with. "windsor" is one of my favorite spots... who did you see at crescent ballroom?

  2. that sounds really good! i havent ever tried kale, but since im trying to eat healthier in the new year- i think i should look into it!
